Même si le Viognier et le Sauvignon ne sont pas des cépages typiques de Provence, nous les avons assemblés avec du Rolle pour obtenir un fantastique vin frais de l'appellation IGP Pays des Maures. Pour la vinification, nous appliquons la même attention à Carlotta qu'à nos AOP. Une vendange à la main, une courte macération pelliculaire à froid, une vinification en grappes entières et un pressurage lent et doux sous gaz inerte pour protéger les jus pressés de l’oxydation.
